White Bean, Asparagus & Tomato Salad


Ingredients 
1/2 pound fresh asparagus, trimmed
1 cup cherry tomatoes, cut in halves
1 (14-ounce) can cannellini beans, rinsed and drained
1/4 cup chopped onion
1 tablespoon drained capers, mashed

1 garlic clove, minced
2 tablespoons extra-virgin olive oil
1 tablespoons white wine vinegar
1/2 tablespoon honey (OR brown sugar)
1 tablespoon spicy brown mustard
10 leaves fresh sage, finely chopped (OR 1/4 teaspoon dried)
1/4 teaspoon pepper
1/8 teaspoon salt


2 tablespoons shredded Pecorino Romano cheese
1 (5-ounce) bag mixed salad greens


***Use mini-food processor for making the dressing

Preparation
1. Snap off tough ends of asparagus; arrange asparagus in a steamer basket over boiling water. Cover and steam 2 minutes or until asparagus is crisp-tender. Plunge asparagus into ice water to stop the cooking process; drain. Cut asparagus into 1/2-inch pieces, and chill. Put into a large bowl.

2. Cut cherry tomatoes in half. Drain and rinse canned beans. Chop onion. Drain and smash capers with side of the knife. Put everything together in large bowl with asparagus.

3. Whisk together garlic, chopped fresh sage, olive oil, vinegar, honey, mustard, salt & pepper in a small bowl or pulse several times in a mini-food processor. Pour over asparagus, tomatoes, beans, onion, and capers, tossing to coat.
Adjust seasoning if necessary.

4.Cover and chill 1 hour. Serve the salad over salad greens; sprinkle with Romano cheese.

Ingredients 
1 cup water
1/2 cup bulgur, dry
1/8 teaspoon salt
1 cup finely chopped flat-leaf parsley (1 bunch)
1/4 cup chopped fresh mint
1 cup cherry tomatoes, halved or quartered (OR 2 medium tomatoes, diced)
1/4 English cucumber, diced
1/2 cup green onions, thinly sliced (1 bunch)
1/4 cup lemon juice
2 tablespoons extra-virgin olive oil
1 garlic clove, minced
1/4 teaspoon salt
Salt and Freshly ground pepper, to taste


***Use mini-food processor for chopping parsley, mint and making the dressing

Preparation
1. Combine water, salt and bulgur in a small saucepan. Bring to a full boil, remove from heat, cover and let stand until the water is absorbed and the bulgur is tender, 25 minutes or according to package directions. If any water remains, drain bulgur in a fine-mesh sieve. Transfer to a large bowl and let cool for 15 minutes.
2. Combine lemon juice, oil, garlic, salt and pepper in a small bowl.
Add parsley, mint, tomatoes, cucumber and green onions to the bulgur.
Add the dressing and toss.
Serve at room temperature or chill for at least 1 hour to serve cold.

Cream Of Corn Cake



Ingredients
Unsalted Butter, 4 Tbsp, melted
Olive Oil, Extra Virgin (or vegetable oil), 3 tbsp
Sugar, 3/4 cup
Vanilla Extract, 1 tsp
Eggs, 2 fresh
Sweet Corn Cream Style, No Salt Added, 1 can (1 3/4 cup)
Flour, all-purpose, 1 1/2 cup
Baking Powder, 1 tsp
Salt, 1/4 tsp 
 
Preparation
1. Preheat oven to 350F. Grease 8" cake pan.
2. In a small bowl, sift flour, baking powder and salt. Set aside.
3. In a large bowl, beat up melted butter, oil, sugar and vanilla. Add eggs and whip until light and fluffy. Add creamed corn and mix till well combined. Add flour and mix until just combined.
4. Pour batter into prepared pan and bake for 50-60 minutes until a toothpick inserted in the center comes out clean. 
Let the cake cool. Serve at room temperature with fruit preserves, whipped cream, honey or maple syrup..

Carrot Apple Salad with Raisins, Nuts & Honey



Ingredients
Carrots, raw, 1/2lbs., grated
Apples, fresh, 1/2 large, grated
Nuts (any kind), raw, 1.5oz, chopped
Raisins, 1 small box (1.5 oz)
Lemon Juice, fresh, 1/4 cup
Honey, 1.5 tbsp
Cinnamon, ground, 1/2 tsp
 
***Optional: dry rolled oats to sprinkle on top

Preparation
Grate carrots and apples. Chop nuts. Put all in a large bowl. Add raisins. Sprinkle with cinnamon. Drizzle with lemon juice and honey. Mix the salad well but gently. Serve cool, sprinkled with oats on top, if desired.

Sweet Potato Pie with Maple Meringue


Ingredients

For Pie:
  • 9" Pie Crust, Reduced Fat
  • Sweet potato, 3 small
  • Condensed milk, Fat free, 10 oz (3/4 of 14oz-can)
  • Egg, 1extra large
  • Egg white, 1extra large
  • Cinnamon, ground, 1 tsp
  • Ginger, ground, 1/2 tsp
  • Nutmeg, ground, 1/2 tsp
  • Salt, 1/4 tsp
  • Whiskey (Bourbon), 2 tbsp (1 fl oz)

For Topping:
  • Maple Syrup, 1/3 cup
  • Water, cold 1/4 cup (4 fl oz)
  • Cornstarch, 2 tsp
  • Egg white, extra large, fresh 2
  • Lemon Juice, 1 tbsp
  • Salt, a pinch
  • Sugar, 2 tbsp


Preparation
1. Preheat oven to 350°F. Bake the pie crust according to the instructions, for 10 minutes. Cool it completely.
2. Pierce sweet potatoes with fork; place potatoes in microwave oven and cook for 10 minutes. Take them out, place in heated oven and bake for 10 more minutes, until potatoes are very tender when pierced with fork. Cool slightly. Cut potatoes open and scoop out pulp. Transfer pulp to processor and puree until smooth.
3. Add sweetened condensed milk, eggs, spices, salt and whiskey. Puree until smooth, for 20 seconds. Pour into crust. Bake for 45 minutes or until knife inserted 1-inch from crust comes out clean.
Cool. Garnish with meringues.

4. Make the Meringues.
Mix water and cornstarch in a glass. Pour maple syrup in a small frying pan, heat up. Add dissolved cornstarch to syrup and cook stirring constantly till the mixture is thick. Set aside.
Separate two eggs, discard the yolks. Put the egg whites, lemon juice and salt in a large bowl. Whip up with a mixer till soft picks, add sugar gradually and whip till it dissolves and egg whites become white glossy. Add maple cornstarch hot mixture to the egg whites one spoon at a time, whipping constantly.

Tomato Tart with Goat Cheese & Herbs



Ingredients
Uncooked Pie Crust 9", refrigerated
Cherry Tomatoes, fresh, 3 cups whole
Olive Oil, 1-2 tsp
Thyme, fresh, 1 tsp (OR 1/4 tsp dry Thyme OR Herbs De Provence)
Salt & Black Pepper
Goat Cheese, 1/4 cup crumbled (2oz)

Preparation
1. Preheat oven 425F. Cover a baking sheet with aluminum foil and spay it with a non-stick spray. Place the cool pie dough on the foil and unroll it.
2. Put tomatoes on dough in one layer leaving 1" on edges. Sprinkle with salt, pepper, thyme and goat cheese crumbles. Fold the edges covering tomatoes and folding the dough to hold together. Drizzle the whole pie with olive oil all over, including the edges, and smooth oil on edges with a brush or fingers. Sprinkle edges with coarse salt for decoration, if desired.
3. Bake the pie in the middle of the oven for 35 minutes. Serve warm.

Puff Pastry Cheese Straws

Ingredients: 
Puff Pastry, 1 sheet, thawed 
Egg, fresh, 1 large, beaten lightly 
Pecorino Romano Cheese, 6 tbsp grated (1.25 oz) 
Pepper, black, freshly ground 
Salt, coarse

Preparation
1. Preheat the oven to 400°F.

2. Beat egg slightly. Roll out pastry. Cut it in half. Brush one half of pastry with egg then sprinkle with cheese.

Place another half of pastry on top and seal it with rolling pan. But do not press too tight. Brush again with egg then sprinkle with cheese, pepper and salt on top. Roll with rolling pan to press the cheese into pastry.

3. Cut pastry sheet into 1/2" strips, width-ways. Twist each piece and place on baking tray covered with parchment paper.

4. Bake in oven for about 10-15 minutes or until the pastry is browned and puffed. Transfer to wire racks and cool.

Acorn Squash Stuffed with Croissant, Goat Cheese & Chestnuts

Croissant, 1 large (2.5 oz), cut into 1/4" pieces, lightly baked and cooled

Acorn Squash, small or medium (1.5 lbs), cut in half and seeded
Maple Syrup, 2 tsp, divided between squash halves

Unsalted Butter, 1/2 Tbsp, divided between squash halves
Egg, fresh, 1 extra large
Milk Goat Low Fat, 1/4 cup
Black Pepper, freshly ground

Cranberries, fresh or frozen, 1/4 cup, whole
Goat Cheese, 1 oz, crumbled

Chestnuts, 5 pieces (1.5oz = 40 grams), coarsely cut
Apple, fresh, 1/4 medium, cut into small cubes
Sage, fresh, 1 tsp, finely chopped  
Thyme, fresh, 1 tsp, finely chopped

    Preparation
    1. Heat the oven 350F. Cut croissant into 1/4" cubes, spread over baking sheet and toast slightly till dry, for 10 minutes. Cool completely.
    2. Heat up the oven to 400F.
    3. Cut acorn squash into half, take seeds out. Brush all the flesh with maple syrup. Put butter inside.
    4. In a large bowl beat up egg, milk and pepper together.
    5. Crumble goat cheese, cut apples and chestnuts, chop fresh herbs. Add them, toasted croissant pieces and cranberries to the egg mixture. Mix very well.
    6. Divide the stuffing into two. Stuff each squash half, pressing the mixture tight, if necessary.
    7. Arrange the stuffed halves in baking dish, cover loosely with aluminum foil sprayed with non-stick spray. Bake for 50 minutes at 400F. Then take the foil off squash, turn the oven off and leave the dish in hot oven for 10-15 more minutes or till ready to serve.

    Roasted Apples & Onions

    Ingredients
    1 large Apple, fresh, cored and cut into bite-size pieces
    1/2 large Onion, raw, cut into bite-size pieces
    1/3 cup fresh (or frozen) whole Cranberries
    1 tbsp. Olive Oil
    1 tbsp. Lemon juice
    1/4 tsp Coriander seed
    1/4 tsp Caraway Seed

    Preparation
    1. Preheat oven F400.
    2. Cut onions and apples. Drizzle with lemon juice and olive oil. Place on a baking sheet. Sprinkle with spices. Add fresh cranberries.
    3. Bake for 30 minutes.

    I'd recommend it served with shredded Pecorino Romano, Gruyere or Swiss cheese.

    Sweet Potato & Bean Chili

    Ingredients:
    1 tablespoon extra-virgin olive oil
    1 jalapeno pepper, fresh, seeded and diced
    1 medium sweet potato, diced
    1/2 large onion, diced
    2 cloves garlic, minced
    2 teaspoons chili powder
    1 teaspoons ground cumin
    1/2 teaspoon curry powder (OR ground chipotle chile)
    1/4 teaspoon salt
    1 cup water
    1 15-ounce can beans (red, black, kidney or any other), drained and rinsed
    1 14-ounce can diced tomatoes (no salt added)
    2 teaspoons lime juice
    1/4 cup chopped fresh parsley (OR cilantro)

    Preparation
    1. Heat oil in a large pan (or Dutch oven) over medium-high heat. Add chopped jalapeno pepper, cook for 1 minute. Add sweet potato and onion and cook, stirring often, until the onion is beginning to soften, about 5 minutes. Add garlic, chili powder, cumin, curry (OR chipotle) and salt and cook, stirring constantly, for 30 seconds. Add water and bring to a simmer. Reduce heat to maintain a gentle simmer and cook until the sweet potato is almost tender,  for about 5-7 minutes.
    2. Add beans, tomatoes and lime juice; increase heat to high and return to a simmer, stirring often. Reduce heat and simmer until slightly reduced, 5-7 minutes. Remove from heat and stir in parsley (or cilantro).

    I'd recommend it served over baked spaghetti squash, cooked pasta, rice, couscous, quinoa or any other grains, in a corn taco shell, inside of cooked half of an acorn squash or with a piece of corn bread.

    Mushroom Baked Risotto



    Ingredients:
    Portabella Mushrooms, 1 large (130-150g), cut into 1/8"-pieces
    Olive Oil, 1 tbsp
    Garlic, 1 clove (minced)
    Rosemary, 1/4 tsp (chopped)
    Onions, raw, 1/4 large (chopped)
    White Wine, 2 fl oz (remove)
    Arborio / Risotto Rice (uncooked), 1/2 cup
    Water, tap, 1/2 cup (4 fl oz)
    Chicken Broth 99% Fat Free, low sodium, 14oz can (2 cups)
    Pecorino Romano Cheese, 2 tbsp (finely shredded)

    Equipment: 1 or 2 clay pots with lids (or baking dish)
     
    Cooking Instructions:
    1. Preheat oven to 400F.
    2. Mince garlic clove through press. Chop rosemary and onion. Cut mushroom into small pieces.
    3. Heat olive oil in a frying pan. Add garlic and onion and cook for 1 minute. Add rosemary and mushrooms and cook uncovered for 5-10 minutes till there is no liquid in frying pan and mushrooms got light brown.
    4. Add white wine and cook for 30 seconds. Add uncooked arborio rice. Mix well.
    5. Add rice-mushroom mixture into clay pot (or devide it between two) or any other kind of baking dish. Pour chicken broth and water. Cover with lid.
    6. Bake for 25 minutes in the oven.
    7. Take it out of the oven. Fluff with folk and add freshly grated cheese. Mix again and serve immediately.

    Cheddar Biscuits

    Ingredients:
    2 cups all-purpose flour
    1 tbsp baking powder
    1/2 tsp baking soda
    4 tbsp salted butter, chilled (OR 4 tbsp unsalted butter & 1/4 tsp salt)
    3/4 cup (2 oz) shredded sharp Cheddar cheese
    1 cup Kefir, chilled (OR buttermilk)

    Equipment: 
    food processor (or pastry blender)
    biscuit cutter

    Cooking Instructions:
    1. Preheat the oven to 450°F.
    2. In a bowl, sift the flour, baking powder, baking soda and salt (if using). Put it in a food processor (or pastry blender) together with butter, pulse until the mixture resembles coarse meal. Add the cheese; toss to coat. Stir in the buttermilk just until the dough comes together. Do not over-knead!
    3. Turn the dough out onto a lightly floured work surface and pat (or roll very easy, do not push on) it into a 1/2 -inch thickness. Dip a biscuit cutter in flour and cut out 8-12 biscuits.
    4. Transfer the biscuits to a baking sheet covered with cooking spray.
    5. Bake for 12 minutes, or until golden brown. Do not open the oven during baking!

    Quinoa Chili

    Ingredients:
    Quinoa, dry, 1/2 cup
    Water, tap, 1 cup
    Salt, a dash
    Kidney Beans Dark Red, 1 cup (with juice)
    Jalapeno pepper, seeded and chopped (OR a pinch of Cayenne pepper)
    Curry powder, 1/2 tsp
    Cinnamon, ground, 1/8 tsp
    Cumin, ground, 1/8 tsp
    Chili powder, 1/4 tsp
    Tomato, medium, diced
    Green Onions, fresh, 2-4 tbsp, chopped

    Cooking Instructions:
    Put quinoa, water and a dash of salt in a pot and cook for 15 minutes.
    In another pot put beans and spices together, add 1/4 cup of water and simmer it for 10 minutes till beans are thick. Add cooked quinoa. Mix together.
    Cut tomato and green onions in small pieces. Put it on top of chili and serve warm.

    Cranberry-Apple Chutney

    Ingredients:
    Orange juice, 1/3 cup
    Lemon juice, 1 tbsp
    Orange zest (or Lemon zest), grated, 1/4 tsp
    Ginger Root, fresh, grated, 1/4 tsp (or 1/8 tsp ground)
    Cinnamon, ground, 1/4 tsp
    Brown Sugar, 1/3 cup
    Cranberries, fresh (or frozen), 2 cups
    Apple, fresh, 1 large, peeled, cored and cut into pieces

    Cooking Instructions:
    Put all the ingredients into a small pot or a sauce pan. Bring to a boil, reduce the heat, steer gently, cover the pot with lid and let simmer for 10-12 minutes.

      1 large tomato (1.25 cups diced)
      1/4 medium onion (1/4 cup finely chopped)

      1 jalapeƱo pepper, stemmed, seeded and finely chopped
      1/2 lime (or lemon), zested and juiced
      1/2 teaspoon sugar

    2. Zest half of lime and squeeze its juice over the vegetables.

    1/4 cups sugar
    1/2 stick (4 tbsp.) unsalted butter, melted
    1 medium banana (3-4oz), overripe, mashed
    1 large egg
    1/2 teaspoon vanilla extract
    3/4 cup all-purpose flour
    1 teaspoon baking soda
    1/8 teaspoon salt
    1/4 cup mini chocolate chips

    Equipment: 
    muffin tin, paper or foil liners

    Preparation
    1. Preheat the oven to 350° and line muffin tin with paper or foil liners.
    2. In a bowl, combine the sugar, melted butter, vanilla extract, mashed banana and egg; mix thoroughly.
    3. In another bowl, whisk flour with baking soda and salt.
    4. Add the dry ingredients to the wet ingredients and whisk until the batter is evenly moistened. Stir in the chocolate chips.
    5. Spoon the batter into the prepared muffin cups. Bake for about 25 minutes, until a toothpick inserted in the center of the muffins comes out with a few moist crumbs attached.
    6. Let the muffins cool for 10 minutes before turning them out onto a rack to cool completely.

    Ingredients
    1 egg white
    1 tbsp. (5 grams) Whey protein (Vanilla)
    2 tbsp. (15 grams ) Rolled Oats (ground in a coffee grinder)
    1/2 tbsp. (5 grams ) whole Flaxseeds (ground in a coffee grinder)
    3 tbsp. (45 grams) Whipped (or small curd) 1%-fat Cottage cheese
    1 tbsp. fresh citrus juice (orange/ lemon/ lime/ grapefruit)
    a pinch (1/8 tsp.) of fresh citrus zest

    Equipment: 
    cooking spray, waffle maker, electric mixer (or food processor), coffee grinder

    Preparation
    1. Preheat the waffle maker.
    2. Grind oats and flax seeds in a coffee grinder till it makes fine powder.
    3. If using a mixer, beat up together egg white, citrus juice and zest and protein powder. Add cottage cheese and mix well. Add ground oats and flaxseed and mix.
    If using a food processor, put all the ingredients and mix well, scrapping sides of the bowl with spatula.
    4. Spray non-stick spay on waffle maker. Pour the batter and cook for 5 minutes.
    5. Serve immediately. Garnish with Greek yogurt, honey and fresh fruits.

    Dough:
    * Milk, 1/2 cup, warm
    * Yeast, dry, 1 package (1/4 oz)
    * White Granulated Sugar, 1/4 cup
    * Unsalted Butter, 3 Tbsp softened (1 stick total, divided into three parts)
    * Egg, fresh, 1 large
    * White flour, 2 cups, sifted (+ more for dusting)
    * Salt, 1/2 tsp

    Filling:
    *Unsalted Butter, 2 Tbsp (melted) 
    * Brown Sugar (light), 1/3 cup
    * Cinnamon, ground, 2 tsp
    * Raisins, 1 small box (1.5 oz)

    Glaze:
    * Brown Sugar (dark), 1/3 cup
    * Unsalted Butter, 3 Tbsp
    * Scotch (Whiskey), 3 tbsp (1.5fl oz)
    * Condensed milk, 3 tbsp
    * Vanilla Extract, 1/4 tsp
    * Salt, 1/8 tsp
    * Walnuts, 1 oz (or any kind of nuts)

    Preparation
    1. Make the Dough:
    Heat the milk until warm.
    In the bowl of a standing electric mixer fitted with the paddle, combine the warm milk and the yeast. Add the granulated sugar and 3 tbsp of softened butter and mix at medium speed until the butter is broken up, 1 minute.
    Beat in the egg.
    Add sifted flour and salt and mix at low speed until incorporated, about 2 minutes. Scrape down sides of the bowl. Increase the speed to medium and mix the dough for 2 minutes longer.
    Scrape the dough into a lightly oiled bowl, cover with plastic wrap and let stand at room temperature for 30-40 minutes.

    2. Preheat the oven to 325°F. Spray muffin pan with nonstick cooking spray.

    3. Make the Filling:
    Melt 2 tbsp of butter in microwave.
    In a small bowl, mix the light brown sugar with the cinnamon.

    4. On a lightly floured work surface, roll the dough out into 1/4" thick rectangle. Brush the 2 tbsp of melted butter over the dough and sprinkle with the cinnamon sugar.
    Sprinkle with raisins.

    Beginning at a long edge, roll up the dough as tightly as possible and pinch the seam. Cut the log into 6 or 8 2-inch pieces and set them in the muffin cups cut side up. Cover and let stand in a warm place (preheated stove top is ideal for that) for 30 minutes.

    5. Bake the buns for 30 minutes, until they are golden brown.

    6. Make the Glaze:
    In a small saucepan, bring the dark brown sugar, salt, butter, Scotch and condensed milk to a boil. Simmer over moderate heat until thickened slightly, about 3 minutes.

    7. Meanwhile, coarsely chop the walnuts. (If you wish you might toast them 10 minutes.) Take the buns out of the muffin pan.

    8. Remove the glaze from the heat and stir in vanilla extract and chopped walnuts. Pour the glaze over the hot buns. Sprinkle with more nuts if you wish.
    Let stand until the buns have soaked up some of the glaze and are cool enough to eat, about 20 minutes. Serve warm.
